Tasting Notes: Aromas of dark red currants, muddled black cherry, toasted cacao nibs, crushed stone, dried meadow flowers, and earthy vanilla hints. Beautifully layered tannins carry the black currant, black cherry, Italian plum, coffee dry rub, a long finish. With its deep core, and Red Mountain tannin structure, this wine is certainly built for the long haul. Drink 2028-2045

Blend: 97% Cabernet Sauvignon, 3% Cabernet Franc

Vineyards: 37% Klipsun, 32% Red Mountain Vineyard, 28% Kiona Heart of the Hill Vineyard, 3% Bacchus Cabernet Franc

Aging: 80% New French oak

"I adore Cabernets from Red Mountain, and Passing Time always does an incredible job showcasing the terroir. This blend of 97% Cabernet and 3% Cabernet Franc sports a lovely nose of black cherry, black plum, crushed boysenberries, toasted anise, mountain sagebrush, tilled earth, and shades of lemongrass. Incredible balance between the mouthwatering acidity and the rich tannins. Enjoy this one now with a hard decant, or enjoy over the next 15 years or more. Highly recommended."

"Checking in as 97% Cabernet Sauvignon and 3% Cabernet Franc, the 2021 Cabernet Sauvignon Red Mountain offers an incredible bouquet of pure black cherry and darker currant fruits as well as Saint- Estèphe-like damp earth, licorice, and lead pencil shavings. Deep, full-bodied, concentrated, and flawlessly balanced, this is world-class Cabernet in the making."

"The 2021 ‘Red Mountain’ Cabernet Sauvignon has a small portion of Cabernet Franc blended in, as this mainly comes from the Klipsun, Heart of the Hill and Red Mountain Vineyards. Stored in 80% new French oak, the wine opens with a beautiful bouquet of violets, scorched earth, smoked brisket and suggestions of black olive tapenade. The palate is plush and round with a generous mouthfeel. The combination of viscosity and underlying verve really makes this tick, as this beautiful wine is already singing at the three year mark. Drink 2024-2044"

"This is almost completely varietal, blending fruit from Klipsun (37%), Red Mountain Vineyard (32%), and Kiona Heart of the Hill (28%), three top sites. Bacchus Cabernet Franc (3%) rounds it out. Aged in 80% new French oak, arresting aromas of dried herb, cherry, coffee, plum, graphite, pencil eraser, flower, and blackberry lead to initially reserved, supple, textured, dark fruit flavors. The intensity ramps up over time. Firm tannins back it up. A lingering finish caps it off. It’s tightly clenched at present, opening to become a powerhouse. Overall though, it’s the balance and persistence that impress most. Best from 2028 to 2038, with plenty of life beyond that. Give it an extended decant if opening on the earlier side of its window. 14.8% alcohol. Natural cork. 330 cases produced."
