2021 Walla Walla Cabernet Sauvignon

 

Tasting notes: This wine opens up with air, with notes of black cherry reduction, Arctic brambleberry, winter mint, black birch bark, and crushed cacao nibs. The palate is taut and structured, with deep black and blue fruits, rubbed thyme, cola, dark chocolate, and alluvial minerals. The finish features classic Walla Walla Cabernet structure. Lay this down for a few years, and it should be very compelling for a long time after.

Blend: 100% Cabernet Sauvignon

Vineyards: 44% Pepper Bridge Cabernet, 31% Seven Hills Cabernet, 25% Summitview Cabernet

Aging: 60% New French Oak

"The 2021 Passing Time ‘Walla Walla Valley’ Cabernet Sauvignon was mostly sourced from the Pepper Bridge and Seven Hills Vineyard. Stored in 60% new French oak, this offers beautiful dried herbs on the nose with black rose petals, graphite and anise notes alongside blackberry pie. The palate is smooth and viscous with a seamless texture. Dense and chewy, this is both hedonistic in its dark fruit profile yet walks the tightrope with fantastic verve and elegance. This borders perfection in a bottle. Drink 2024-2044"

"The 2021 Walla Walla Valley Cabernet Sauvignon from Passing Time was aged in 60% new French oak and features grapes from Pepper Bridge (44%), Seven Hills (31%), and Summitview (25%). It makes a grand first impression and doesn’t let go. There is tremendous power and density but it still delivers some red-fruit aspects on the palate. Cedary herbs, vanilla, and tobacco leaf play second fiddle, leading to a wine with sweet, crunchy tannins and wonderful purity. 175 cases made. Highly recommended. "

Medium to full-bodied, focused, again, with incredible purity, it's a stunning Cabernet Sauvignon from the Walla Walla Valley that's going to shine with just 3-4 years of bottle age and cruise for two decades or more."

Aged in 60% new French oak, it’s still settling in, with the locked up aromas that show notes of chocolate, cherry, black raspberry, and barrel spice. Boom! The palate is an eruption of red and black fruit flavors. The intensity grabs you and shakes you. The finish hangs for days. It’s just delicious. Best from 2027 to 2037 with plenty of life beyond that. 14.9% alcohol. Natural cork. 200 cases produced."
